ORGANOLECTIC PROFIL                       
COLOUR: Light straw-coloured.
PERLAGE: Delicate and persistent.
BOUQUET: Intense, complex, white flowers fragrances and exotic fruits.
FLAVOUR: Sapid, fresh, captivating.
RECOMMENDED: a very nice aperitif; it can be used during the whole meal
ALCOHOL: 11% vol.
BOTTLE: Champagnotte 0,75 litres.
BOTTLES PRODUCED: 8.000.


WINEMAKING PROCESS                        

TYPE OF WINE: Spumante brut - Charmat method.
GRAPES: Pignoletto selection 90%, Sauvignon Blanc 10%
PLACE OF PRODUCTION: Zola Predosa - Bologna.
PROCESS: Handmade vintage, lightly pressed; fermented at a controlled temperature (18°C).
MALOLACTIC FERMENTATION: No.
AGEING PERIOD: Kept in stainless steel containers, long re-fermentation in autoclave at controlled temperature, with 6 months ageing on yeast.
