WINEMAKING PROCESS
TYPE OF WINE: White sparkling wine - spumante
CHARMAT method.
GRAPES: selected Pignoletto, Pinot and Chardonnay D.O.C. from the hills
of Bologna.
PLACE OF PRODUCTION: Zola Predosa - Bologna.
PROCESS: Manual vintage, lightly pressed and fermented at controlled temperature
(18°C).
MALOLACTIC FERMENTATION: No.
AGEING PERIOD: conserved in stainless steel containers, re-fermented at
length in an autoclave and allowed to age for 6 months at controlled temperature.
