WINEMAKING PROCESS
TYPE OF WINE: Red wine D.O.C
GRAPES: 100% Cabernet Sauvignon of Colli Bolognesi.
PLACE OF PRODUCTION: Zola Predosa - Bologna
WORKING PROCESS: Manual vintage, first fermentation with the skin for 15 days, after fermentation at checked temperature of (26°C). Conserved in Rovere tanks for 18 months, kept for 12 months in steel containers and after conserved in bottles for 6 months.
MALOLACTIC FERMENTATION: Yes.
