ORGANOLECTIC PROFIL
COLOUR: light straw-yellow, with greenish highlights.
BOUQUET: fruity with essence of white greenish and thorn tree.
FLAVOUR: fresh and full-bodied to taste, with that unmistakable rather
bitter after-taste.
RECOMMENDED as an aperitif but it can be also served with Tortellini
or white meats. Excellent at anytime of the day.

TYPE OF WINE: Pignoletto D.O.C. from the
hills of Bologna.
GRAPES: 100% Pignoletto from the hills of Bologna.

WORKING PROCESS: Manual vintage, lightly pressed fermented at controlled
temperature (18°C)in stainless steel container.
MALOLACTIC FERMENTATION: No.
AGEING PERIOD: Re-fermented at length in an autoclave and allowed to
age for 40 days.
