The Winery in the Colli Bolognesi where Pignoletto was born

Gaggioli is a historic winery located in the hills of Zola Predosa in the Province of Bologna. We have been producing quality DOC and DOCG wines for over 50 years. Careful attention to every process from harvesting to wine-making, bottling and labeling characterizes our wine making. Gaggioli carries out the full process of wine-making. Our aim is to offer “a friendly wine”, the perfect wine for all occasions which never disappoints.

The Winery

The winery is built following the natural slope of the terrain. The wine making area where the pneumatic stainless steel press for soft pressing is located, along with the refrigeration area, small stainless steel vats and containers for decantation are all located on the top floor. The ground floor houses the stainless steel vats for fermentation, stabilisation and storage of the different types of wine. Pressure tanks for the second fermentation of sparkling wines and Spumante as well as the bottling, labeling and shipping departments are also located here.

The original winery building houses 10 to 15 hectoliters oak casks for the aging of  red wines.

Our Wines

Our winery in Zola Predosa currently produces 130,000 bottle a year. Our wine is sold on the domestic market and exported, mainly to Germany, Switzerland, Poland, the UK and China.

Colli Bolognesi Wines: Our Labels

As well as our renowned Pignoletto we also make several other wines:

The cooked must from the Pignoletto grapes is made into Saba – a traditional ingredient in Bolognese cooking, it is delicious in Pumpkin Tortellini, goes well with Parmesan and Ricotta cheeses and, surprisingly, on Vanilla ice-cream.

Wines from the Colli Bolognesi - time-honoured wisdom and modern technology

Our still and sparkling wines as well as our spumantes and passito are made from healthy grapes grown using no harmful pesticides only and following the CEE directives on agricultural production methods (Reg. CEE 2078/92 e 1257/99). A traceability system ensures our complete control over the entire production chain and our wines are analyzed before being distributed.

A modern nitrogen system, connected to the steel vats and temperature controlled pressure tanks prevents the wine from oxidation and means that we use less than half of the sulphites legally permitted by Italian law.
