PROCESS: manual vintage, first fermented with the skin for 20 days, then re-fermented at controlled temperature (20°-22°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: yes.
AGEING PERIOD: kept in stainless steel tanks and aged in bottle.
