WINEMAKING PROGRESS

TYPE OF WINE: Spumante brut – Charmat method.
GRAPES: selection 40% Pinot Bianco, 40%Sauvignon Blanc, 20% Pignoletto
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: handmade vintage, lightly pressed; fermented at a controlled temperature (15°C).
MALOLACTIC FERMENTATION: no
AGEING PERIOD: kept in stainless steel containers, long re-fermentation in autoclave at controlled temperature, with 6 months ageing on yeast.
