GRAPES: 100% Barbera
PLACE OF PRODUCTION: Zola Predosa – Bologna
PROCESS: Manual vintage, maceration for 8-10 days and fermented at a controlled temperature (22°C)
MALOLACTIC FERMENTATION: Yes.
AGEING PERIOD: It is aged in stainless-steel containers and undergoes secondary fermentation in an autoclave before being bottled in a controlled atmosphere.
