FLAVOUR: elegant, intense, persistent.
RECOMMENDED: pasta dishes. White meat and fish. Cheese is not too savory.

WINEMAKING PROGRESS

TYPE OF WINE: Bianco Bologna DOC Colli Bolognesi.
GRAPES: selection of 50% Sauvignon Blanc, 50% between Grechetto Gentile and Pinot Bianco.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: manual vintage, cold maceration, lightly pressed, fermentation at controlled temperature (15°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: no.
AGEING PERIOD: prolonged aging with lees in stainless steel tanks. Followed by aging in bottle.
