PROCESS: Hand-picked, cold maceration, pressing, fermentation at controlled temperature (13 ° C) in stainless steel tanks.
MALOLACTIC FERMENTATION: no
AGEING PERIOD: prolonged aging with lees in stainless steel tanks. Followed by aging in bottle.
