ORGANOLEPTIC PROFILE

COLOUR: dark intense ruby red.
BOUQUET: red fruits, with a hint of undergrowth.
FLAVOUR: velvety, full-bodied and well balanced taste.
RECOMMENDED: served at 18 °C after being uncorked a few hours earlier, particularly enhances roast meat and game, sauces and spicy pork, mushrooms and mature cheese. It can be served throughout the meal, especially if combined with soups or pasta dishes. Excellent with beef fillets in balsamic vinegar.

WINEMAKING PROGRESS

TYPE OF WINE: Cabernet Sauvignon DOC Colli Bolognesi.
GRAPES: 100% Cabernet Sauvignon.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: manual vintage, first fermented with the skin for 20 days, then re-fermented at controlled temperature (20°-22°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: yes.
AGEING PERIOD: in stainless steel tanks and bottle.

Using vines originally from France our Cabernet Sauvignon is the wine which best reflects the vintner’s passion and love for his origins, the town of Zola Predosa, where the hilly countryside is the ideal ground for this grape.
