ORGANOLEPTIC PROFILE

COLOUR: intensive ruby-red wine.
BOUQUET: ripe fruit, spices and undergrowth, with a light hint of roses and raspberries.
FLAVOUR: warm, full-bodied.
RECOMMENDED: with red meat, boiled meat, roast suckling, pork, lamb, cheese, mushrooms. Delicious with bean soup.
ALCOHOL: 13,5% vol.
BOTTLE: 0,75 lt.

WINEMAKING PROGRESS

TYPE OF WINE: Merlot DOC Colli Bolognesi.
GRAPES: 100% Merlot.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: manual vintage, first fermented with the skin for 20 days, then re-fermented at controlled temperature (20°-22°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: yes.
AGEING PERIOD: in stainless steel tanks and 6 months in bottle.

A small vinyard, Vigna del Sole, grows Merlot grapes from selected French vines, using an arched cane system with a strong planting density.
The resulting harvests are always well balanced and only the best grapes are selected.
