PLACE OF PRODUCTION: Zola Predosa – Bologna
PROCESS: Manual vintage, maceration for 8-10 days and then fermented at a controlled temperature (22°C).
MALOLACTIC FERMENTATION: Yes.
AGEING PERIOD: in stainless steel containers and six months in glass bottles
