COLOUR: light straw-yellow, with greenish highlights.
BOUQUET: fruity with essence of white flowers and thorn tree.
FLAVOUR: fresh and full-bodied to taste, with that unmistakable rather bitter after-taste.
RECOMMENDED: as an aperitif but it can be also served with first courses with fish or vegetable, roast white meat, grilled or baked fish, pizza. Excellent at anytime of the day.

WINEMAKING PROGRESS
TYPE OF WINE: Pignoletto Frizzante DOCG Colli Bolognesi.
GRAPES: 100% Grechetto Gentile from the hills of Bologna.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: manual vintage, lightly pressed, fermented at controlled temperature (15°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: no.
AGEING PERIOD: re-fermented at controlled temperature in autoclave and allowed to age at least 60 days.
Careful selection and harvesting of the unique Grechetto Gentile grape, combined with a superior winemaking process, create an exclusive and harmonious wine, which embodies the essence of the territory where it is cultivated.
