COLOUR: ruby red.
BOUQUET: moss and ripe fruit. Fini hints of raspberry and violet.
FLAVOUR: warm, fruity, persistent, pleasantly fruity.
RECOMMENDED: lasagne, tagliatelle with meat sauce, red meat, game, cheeses also challenging, mushrooms and truffles.
ALCOHOL: 14% vol.

WINEMAKING PROGRESS

TYPE OF WINE: Rosso Bologna DOC Colli Bolognesi.
GRAPES: selection of 50% Cabernet Sauvignon, 50% between Merlot and Syrah.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: late manual vintage, first fermented with the skin (over 20 days) then re-fermented at checked temperature (20°-22°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: yes.
AGEING PERIOD: conserved in stainless steel tanks and wooden barrels 15 hl for 12-18 months, then conserved in bottle for 4-6 months.
