COLOUR: dark intense ruby red.
BOUQUET: spices, red ripe fruit, with a light aroma of coffee.
FLAVOUR: full-bodied and light quantity of tannin.
RECOMMENDED: with fillets of beef in balsamic vinegar, excellent with roast meat and game, sauces and spicy pork. Delicious with soups.

WINEMAKING PROGRESS

TYPE OF WINE: Rosso Bologna Riserva DOC Colli Bolognesi.
GRAPES: selection of 50% Cabernet Sauvignon, 50% between Merlot and Syrah.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: late manual vintage, first fermented with the skin (over 20 days), then re-fermented at checked temperature (20°-22°C) in stainless steel tanks.
MALOLACTIC FERMENTATION: yes.
AGEING PERIOD: conserved in wooden barrels and barrique for 18-24 months, 12 months in stainless steel tanks and then conserved in bottle for 6 months.
