ORGANOLEPTIC PROFILE
COLOUR: lightly rosè coloured wine.
BOUQUET: fruit and aromatic herbs.
FLAVOUR: fresh, persistent, harmonious taste.
RECOMMENDED: as an aperitif, and as such, can be mixed with fruit juices. Excellent with cold starters, salmon and dry biscuits.

WINEMAKING PROCESS
TYPE OF WINE: Vino Spumante Brut Rosato.
GRAPES: selection of Barbera e Pinot Nero, in rosè.
PLACE OF PRODUCTION: Zola Predosa – Bologna.
PROCESS: manual vintage, lightly macerated in the skins for a short period, and is then allowed to ferment very slowly in stainless steel tanks at controlled temperature (15°C).
MALOLACTIC FERMENTATION: no.
AGEING PERIOD: re-fermentation at length at controlled temperature in autoclave and then aged on the lees (over 1 month).
